| Boiled baby potatoes (peeled) | 6-7 pc |
| Big diced onion | 1 cup |
| Long stripes carrot (blanched in boiled water for 2 minutes) | ½ cup |
| Bell peppers (any colours work) diced | 1 cup |
| Zucchini diced | ½ cup |
| Mushroom halves | 1 cup |
| Diced tofu or paneer | ½ cup |
| Broccoli florets | ½ cup |
| Cauliflower florets (blanched in boiled water for 2 minutes) | ½ cup |
| Garlic finely chopped | 1 tbsp |
| Coriander leaves | 2 tbsp |
| Salt | 1 tsp |
| Pav bhaji masala | 2 tsp |
| Cumin seeds | ½ tsp |
| Crushed black pepper | A pinch |
| Cooking oil as per choice | 2 tbsp |
Procedure
Get all the veggies cleaned, chopped and ready.
In a big non-stick pan add in the oil and let it heat for a few seconds. Add in the garlic and cumin seeds, saute for 30 seconds. Now add in the onions, zucchini, cauliflower florets and carrots. Let this cook down for 4-5 minutes on medium heat.
Add in the broccoli and bell peppers, let this cook for 2 more minutes. Add in the salt and pav bhaji masala. Let this saute for another 1 minute.
Lastly among the veggies add in the mushrooms and now saute for 1-2 minutes on high flame.
Keep this aside once done. In another small pan add a few drops of oil, drop in the tofu/ paneer. Sprinkle some salt and some black pepper. Saute the cubes on top and bottom sides for 2 minutes each so it has a nice golden brown colour to it.
Now toss the proteins into the veggies.
Garnish these beautiful tossed veggies with chopped coriander and it's ready to be served. This dish is a quick, nutritious and protein packed meal in itself.
