Aam Panna

(serves 6-7)

Raw mango 1 kg
Water ½ liter
Salt ½ tsp
Jeera powder/ cumin powder 1 tbsp
Black salt 1 tbsp
Black pepper powder 1 tsp
Sugar 500g
Chaat masala 2 tsp

Procedure

Peel and slice mangoes, remove the seeds.

Set a wok on a medium heat, transfer the mango pieces into it.cook until the raw mangoes are soft, cool this down completely. 

Blend these in a mixer, add in jeera, black salt,  pepper & chaat masala. Grind well to form a fine paste.

Set another pan on low heat, add in the sugar & water, boil this for 5-7 minutes until it comes to a one string consistency.

Now add in the prepared mango pulp and leave it on slow simmer for 6-7 minutes. Cool this down completely and serve it chilled.
