Mumbai Style Pav Bhaji

(serves 4)

Carrots  1 cup
Onion chopped 1 cup
Boiled potatoes 3 pc
Peas  ½ cup
Cauliflower  ½ cup
Tomato  2 cup
Ginger paste 2 tsp
Garlic paste 2 tsp
Kashmiri red chilli 2 tsp
Turmeric 1 tsp
Salt 1½ tsp
Coriander powder 2 tsp
Pav bhaji masala 3 tsp
Cumin seeds 2 tsp
Cooking oil as per choice 3 tbsp
Butter  2 tbsp

Procedure

Boil carrot potato, peas & cauliflower until soft. Drain & mash them together.

In a kadhai, add oil, cumin and let it spitter.

Add ginger & garlic paste, saute for a minute. Add onions until translucent.

Add in tomatoes, and saute further. Once cooked add in turmeric, coriander powder, kashmiri chilli powder and pav bhaji masala.

Now add in boiled veggies and cook for 10 minutes while stirring it occasionally.

Finally top it with a dollop of butter and it's ready to be served with fresh coriander. The bhaji can be enjoyed with some freshly toasted pav, sliced bread or parathas.
